Top Ten Meals For A Mexican

I’m so excited to link up with The good life blog about FOOD. Why am I excited, well, because I can showcase some of the food I am proud of – Mexican food.

Not everybody have eaten real Mexican food from this side of the North America land, unless they have travelled themselves to Mexico or they know or are married to one.

To give you a little insight of what a Mexican would miss eating if not in Mexico, I will show you my top ten Mexican meals (or ingredients to make one) that are always present at my Canadian home:

1. Huevos rancheros (Mexican farmer’s eggs). Simple fried eggs with salsa on top. Yummy. The best of all, they can be eaten at ANY time of the day. Yes, you heard me, anytime. My husband almost collapsed when he saw me having eggs for dinner. He loves them now.
2. Beans. No matter their form or kind: refried, whole, black, kidney, pinto I make them fresh. They are so easy to make and even better since their salt and sugar content is controlled. I also like to make them myself so I can assure those sugars and starches are removed properly, nobody likes to be gassy, right?
3. Mexican rice. No Mexican dish can be eaten w/o this delicious carb. I have to say I am okay cooking this dish my self. However, it is damn tastier when it’s made back home by my grandma. 
4. Picadillo. Ground beef couldn’t be more delicious than this. A most-eat when I go back home.
5. Mole. One of the easiest Mexican dishes out there. Okay, I’ll reveal a secret, no Mexican family makes their mole from scratch. We use a little jar with an already-made paste that will need to be dissolved with chicken stock. Of course, there might be some people (or restaurants) that might do this paste from scratch, but believe me, the stuff from the jar is pretty damn good that even my grandma uses it.
 
6. Pollo en achiote. Again, another super mega easy to make. Achiote can be found already as a rub type of spice and when added to chicken, well it’s just to die for. 
7. Tortillas. Never mind the kind, either flour or corn, tortillas are always a great alternative to bread. I love my eggs (#1) with tortillas. As well, you can add anything to them, cheese, avocado, salsa, beans, anything, you will always have a meal out of them.
8. Tomate. I don’t know why, but I find myself thinking of a tomato as a sexy fruit. I just want to eat it so I can feel the crunch inside my mouth.

Tomate is one of the base ingredients in almost every dish: soups, rice, meat dishes, salsas.

9. Elote. Oh my God. Everytime I go back home I must have one of them. Corn is just part of our heritage. Corn is Mexico. Period.

Corn can be an ingredient, snack or the main meal. Its preparation doesn’t have limits and you can always add anything from your fridge or any of your favourite ingredients. My favorite is to rub mayo, sour cream, ricotta, some chili powder and perhaps a little bit of lime. Yummy.

10. Salsa. This just makes some of my dishes taste better. I haven’t tried making it myself since I have found a good selection of salsas from back home as well as a local brand – President’s choice. My brands to recommend abroad is “La Costena”, “Buffalo”, “La Valentina”. Other than those I found them very sweet and non-Mexican sazon.
Now, if you excuse me, I’ll go and grab me some corn. Yum yum.

    Oh so many yummy things! My kind of food too. Though, I’m not sure I’ve ever heard of “mole”. I need to look more into this.

    I love homemade tortillas! It took me a long time to learn how to make them right, but they are so good right off the range and with an egg in them! I love mexican food so much, but I’m not very adventurous with cooking it. Your food photos look so delicious!

    My husband and I have a favorite Mexican place to go. I believe its as close to the real thing as we’ve found yet. It mentioned it in my post. I haven’t cooked any myself though.

    Thanks all of you, really Mexican food seems everywhere and at the same time is not very much anywhere LOL.

    I just wish I had learned the good tricks from grandma when I could, damn it!

    My favorite? #9. I love corn! That looks so good! Around here, if I want that kind of corn, I’d have to go to the park and wait for the corn man to come around with his ice cream cart looking thing he pushes around… $3 worth of yumminess!

    Hi from Listicles:
    1. I am a frequent “longing loiterer” in the Mexican food area of supermarkets – I want to get all the stuff and the creme and different kinds of cheeses etc. but I have no idea what to do with them so this post helped!
    2. I still am not sure what mole is but it sounds delish.
